1 tablespoon Biona Extra Virgin Olive oil
1 onion, finely chopped
1 leek, finely chopped
500g peeled and diced pumpkin
600g peeled and diced sweet potato
2 table spoons Bouillon
1 1/4 cups Biona Organic Coconut Milk
1 table spoon freshly grated ginger
Heat olive oil on medium heat. Add onion, leek and ginger. Saute for a few minutes until soft.
Add Pumpkin, sweet potato, water, bouillon. Bring to the boil - reduce heat, cover and simmer for 15 min.
Remove from heat, blend the soup and add the coconut milk.
Season to taste.
